Mediterranean
Baked Fish
Serves 4


4 firm white fish fillets
2 C fresh breadcrumbs
Zest from one small lemon
½ finely chopped red chilli
2 Tbsp finely chopped dill
2 Tbsp finely chopped parsley
1 Tbsp oil
Salt and cracked black pepper to taste

Preheat oven to 200C
1.    Combine breadcrumbs, zest, herbs, salt, pepper and oil.
2.    Place fish fillets on tray lined with baking paper and press herbed crumbs on top.
3.    Bake for 12-15 minutes until fish is just cooked.
4.    Serve with lemon wedges and a green salad or steamed vegetables

Health Tip
Chilli is useful to ease the following conditions: colds, fevers, sinus congestion, tonic for the digestive and circulatory system. It increases heart action without raising blood pressure and improves circulation to cold hands and feet.

Ginger Fish Fillets
4 snapper fillets
1 Tbsp grated ginger
1 Tbsp soy sauce

1.    Arrange fish fillets in a steamer. Spread with grated ginger and drizzle with soy sauce.
2.    Place steamer over a pan of simmering water and cover tightly.
3.    Steam fish for 6-8 minutes until cooked.
4.    Drizzle fish with extra soy and top with shredded green onion.

Serve with steamed Asian greens and rice.
